Baked Oatmeal

Servings: about 12-good size
Ingredients: 3 cups oatmeal
1/2 cup brown sugar
Applesauce (see preparation)
2 pints blueberries
1 banana sliced and cut in small pieces
Couple handful of pecans
2 t baking powder
3 eggs
2 c skim milk
2 t vanilla
2 t cinnamon
Dash of nutmeg
Preparation:
1.Blend all dry ingredients plus applesauce (I usually microwave 2 or 3 peeled/cored
cut up fresh apples in a little water for about 7 minutes.
2. Blend eggs, milk, vanilla, spices in mixer or blender. Mix with dry ingredients and add
fruit and nuts and mix. I use a round 9" with high sides, throwaway sprayed with Pam to
bake it in. Bake at 350 for about half hour.

Serving Suggestions: Serve with dairy whip, ice cream or plain cream. Eat it warm or cold. It is delicious.
Comment: We eat this for breakfast, serve warm with dairy whip and for dessert with ice cream. It has very little fat. My friend Marsh Cohen had this at a bed and breakfast in Colorado. She couldn't get the original recipe So she put this together after much experimentation. She submitted it to a wild oats recipe contest and won 1st place. I have tried it with different ingredients, such as strawberries, raspberries, and honey instead of vanilla or almond extract. Use your own ideas, it can only get better and my son (14) loves it.
