Rosh Hashanah Mehren (Carrot) Tzimes

Ingredients:
1 kg peeled carrots sliced into 5mm discs
50 gr. honey, sugar or golden syrup
250 ml water
2 Tbsp. schmaltz, butter, solid vegetable fat or oil (peanut)
2 Tbsp. flour
1 Tsp. powdered ginger
Freshly ground pepper
Salt

Preparation:
Simmer the carrots with water, honey and salt until they are almost tender.
Heat the fat in a small frying pan, add the flour and fry, mixing all the time, until the flour is pale brown and omits a pleasant nutty aroma. Add to the carrots and mix well, season with pepper and cook for another 5 minutes or until the sauce is thickened. If the sauce is too thick, dilute with some orange juice. Serve hot.
